A typical day for me eating would be: I eat 6 meals- (breakfast, snack, lunch, snack, dinner, snack). When following a vegan diet, I would have a smoothie with vanilla soy milk, almonds, banana and strawberries. Or toast with veggie bacon and scrambled tofu for breakfast. My snacks would be either fruit or vegetables with veggie cheese. Sometimes for lunch I would have a veggie burger or veggie lunch meat with cheese sandwich and an apple. My dinner could be sautéed Portobello mushrooms over rice and or veggie crumbles with broccoli. Or if on keto it could be asparagus with baked chicken and cauliflower rice.
I work out 5-6 days a week also- lots of cardio and 3 days of weight training. I drink at least a gallon of water each day and I cut out sodas and juices. While I was losing, I strategically swapped between a combination of a vegan diet, keto diet and an 16/8 intermitting fasting routine (which I still do today) I usually do 11-7 pm or 12-8 pm. For those who are following a vegan and or keto diet, you can go on google and or Pinterest and see tons of recipes and ideas to cook vegan (even without soy- or keto). Just the other day I got an awesome sweet and sour cauliflower recipe I tried and a veggie chick pea quesadilla that was delicious. Getting creative and experimenting with different products is the only way to not get bored and to make sure you are getting the proper nutrients. My favorite breakfast choices besides a smoothie, for vegan diet is; vegan burrito, scrambled tofu with garlic red skin potatoes and or avocado toast with veggie bacon on top. When on a keto diet, scrambled eggs with cheese with spicy sausage or steak and eggs with sautéed mushrooms and bell peppers. With a side of strawberries. Your options are endless/don’t give up on it on trying new things.
